Temperatures

Fridges, freezers and food kept hot

What each unit is checked against, how often, and what to write when a reading is out of range.

Temperature readings

Take each unit's reading as often as its setting asks (twice a day by default): at opening and in the afternoon, for example.

A fridge holds food at 4 °C ± 2 °C, so 6 °C at most; hot holding keeps food above 60 °C (Resolución 2674 de 2013, art. 18). The freezer's −18 °C is the app's setting.

When a reading is out of range, write what was done straight away. Take another reading afterwards to show the unit is back in range.

Names, limits and how often are settings; a fridge and hot holding may be set stricter than the resolution, never looser.

Food kept hot

Food kept hot, above 60 °C

Food kept hot waits above 60 °C until it is served. A reading of 60 °C or less is out of range: the app asks what was done, such as reheating or discarding.

Frozen food

The resolution asks for frozen food to be kept frozen. −18 °C is the app's starting setting for a freezer and can be set between −30 and −12 °C.
