Does the app replace the sanitation plan?
No. Resolución 2674 de 2013 asks for a written plan with procedures, schedules, records, checklists and who is responsible. The app keeps the records and the checklists; the written procedures stay with the restaurant.
Where do the limits come from?
The fridge (4 °C ± 2 °C, so 6 °C at most) and hot holding (above 60 °C) from art. 18 of the resolution. The freezer's −18 °C and every frequency are settings you can change.
What if a reading is out of range?
Write what was done: food moved, the unit adjusted, the door closed, food discarded. The app keeps the reading and the action together and puts both in the report.
Does the app keep staff health data?
No. Medical certificates and health records stay out of the app; it keeps only the initials of whoever made each record.
Does anything leave the phone?
Only a report you share yourself. There is no account and no internet access.
